Production Method
The olive cultivation takes place on terrains with a mild climate. The soil is clayey and rich in ferric oxide. Periodic fertilizing is done with the administration of nitrogen, phosphorus, and potassium. The fight against the olive fly is done with the spraying of baits from the soil, using biologic methods, or without any treatment. Gathering takes place with the help of nets that collect the fully ripe fruits falling on the ground naturally. Transportation is done in plastic crates of 30 kg. Successively, before being commercialised, the black olives are selected (they should not have infection signs), washed and preserved in special refrigerators.
Appearance and Flavour
The Throumpa Ampadias Rethymnis Kritis PDO is a table olive with a cylindrical shape and a streamlined nucleus. The olives loose the bitter taste naturally, thanks to the presence of the Phoma Oleae fungus, which lends the olive a pleasantly mild taste.

The history of the table olive Throumpa Ampadias Rethymnis Kritis PDO is linked to the longstanding tradition of the olive tree culture in Greece, which is evidenced in historical sources and archaeological finds, assigning ancient origins to this cultivation.

Distinctive Features
The table olive Throumpa Ampadias Rethymnis Kritis PDO can best express its intense and very pleasant flavour thanks to the complete ripening that takes place on the tree. In fact, these olives are only gathered after they naturally detach from the tree and fall on the nets especially placed on the ground.
