The Ostuni PDO is reserved for the following typologies of wine: White; Red (only with indication of grape variety). The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Ostuni PDO is within the entire territory of the municipalities of Ostuni, Carovigno, San Vito dei Normanni and San Michele Salentino, and parts of Brindisi, Latiano and Ceglie Messapica in the Province of Brindisi, in the Apulia region.
Blends
White: 50-85% Impigno, 15-50% Francavilla, with the possible addition of Bianco d’Alessano and/or Verdeca, max. 10%.
Description of product typologies
Ostuni PDO Bianco is intense straw-yellow in colour with suggestions of golden highlights; the nose is fairly intense, with fruity notes, delicate hints of peach and slight sensations of hawthorn flower; it is dry, fresh and balanced on the palate, with a good persistent finish. Ostuni PDO Rosso wines have the organoleptic characteristics that are typical of the grapes and terroir of origin. The vinification processes must take place within the production area; however, taking traditional situations into consideration, these operations may be carried out within the entire territory of the municipalities even if only parts are within the grape production area.
Grape variety specifications
The Ostuni PDO may display the specifications of the following grape varieties. From red grape varieties: min. 85% Ottavianello, with the possible addition of Negroamaro and/or Notar Domenico and/or Susumaniello and/or Malvasia Nera, max. 15%.Ostuni PDO Susumaniello is cherry-red to smooth ruby-red in colour; it is delicate on the nose with typical aromas of fruit; the palate is dry and harmonious.
