Production Area
The production area of the table olive Konservolia Piliou Volou PDO is within the administrative boundaries of the municipal areas of: Agria, Kato Lechonia, Ano Lechonia, Kala Nera, Afetes, Milina, Lafkos, Xinovrysi, Mouresi, Aghios Dimitrios, Anilio, Drakia, Aghios Lavrentios, Neochori, Kalamaki, Lambiro, Xorichti, Argalasti, Trikeri, Promiri, Tsangarada, Kissos, Makrirrachi, Zagora, Pouri, Aghios Vlasios, Aghios Georgios and Milea in the province of Volos, in the prefecture of Magnesia, in the Thessaly region.
Production Method
The olives are cultivated on a terrain that is submitted to periodic fertilizing with nitrogen, phosphorus and potassium. The fight against the olive fly is done with the spraying of baits from the soil, using biologic methods, or without any treatment. Gathering is done by hand, during the final ripening stage, when the colour of the olives is black, or earlier, when they are still green. Transportation is done in plastic crates of 25 kg. Finally, before being commercialised, the black olives are treated with soda, the green ones with a caustic soda solution, and subsequently they are both pickled.
Appearance and Flavour
The Konservolia Piliou Volou PDO is a big table olive (7 gr) and has an intense black colour. The body is crunchy (it detaches easily from the nucleus) and the flavour is fruity.
History

The product is sold as Konservolia Piliou Volou PDO. The olives are marketed in plastic containers of 2 kg or in glass containers of 5 kg or 13 kg. Glass containers with smaller quantities (1 kg) are planned for the future.

The variety Konservolia, given its peculiar organoleptic qualities, is amongst the most wide-spread and appreciated in the territory.
