Asolo Prosecco PDO or Asolo PDO is pale straw-yellow, varying in intensity; the nose displays characteristic fruity fragrances; it is characteristic and rounded on the palate, ranging from dry to semi-sweet. Asolo Prosecco PDO or Asolo PDO Spumante Superiore is bright straw-yellow, varying in intensity, with persistent foam; it is pleasant and characteristically fruity on the nose; the taste ranges from brut to semi-sweet, and it is full-bodied, pleasantly fruity and characteristic. It can be sold in the following types: extra brut, brut, extra dry, dry and demi-sec. It can display the specification “sui lieviti” (on the lees) on the label. Asolo Prosecco PDO Spumante Superiore with the specification “sui lieviti” is straw-yellow, varying in intensity, with the possible presence of haze; the nose displays pleasant and characteristic fruitiness, with possible hints of bread crust and yeast; it is fresh, harmonious and fruity on the palate, with possible hints of bread crust and yeast. Asolo Prosecco PDO Spumante Superiore with the specification “sui lieviti” must remain for at least three months on the lees; this period commences from the day of the tirage, but in any case from March 1st to June 30th of the year following that in which the grapes were harvested. Only wines from the year in which the grapes were harvested can be used to make the base. Asolo Prosecco PDO Spumante Superiore with the specification “sui lieviti” must be released for consumption as Brut Nature, after having fermented on the lees for at least 90 days. Asolo Prosecco PDO or Asolo PDO Frizzante has a straw-yellow colour, varying in intensity, with evident bubble formation; the nose is characteristically fruity; it is fruity and characteristic in the dry to semi-sweet wines.
Additional specifications
The designation of Asolo Prosecco PDO or Asolo PDO Spumante may also contain the specification Millesimato, followed by the year the grapes were harvested in. The term Millesimato cannot be used for Asolo Prosecco PDO or Asolo PDO Spumante accompanied by the specification “sui lieviti”.
