Production Method
The lambs are reared extensively on natural grass pastures and suckle the ewes. The temperate, wet climate of the production area and its topography present the ideal conditions for extensive pastures on which the flocks graze. The lambs are slaughtered when they are judged to ready by the farmer, at under one year old, in approved abattoirs.
Appearance and Flavour
Welsh Lamb PGI is firm and white, with good colour and is considered to have a sweet succulent flavour.
History
Welsh Lamb PGI is linked to the traditions of extensive rearing of sheep in Wales, which plays an important role in Welsh rural economy, and there are historic references dating as far back as the 14th century. Farms are often family owned and over the generations a great deal of expertise in producing Welsh lamb has been accumulated.
Gastronomy
Welsh Lamb PGI can be kept for a few days on the coldest shelf of the refrigerator. It is eaten cooked and, according to the cut type, it can be roasted, oven baked or grilled.

This lamb is only sold as Welsh Lamb PGI. It is sold fresh, whole or in prepacked cuts and joints.
