The production area of Vin Santo del Chianti Classico PDO is within the territory of Chianti Classico, which incorporates numerous municipalities in the provinces of Florence and Siena, in the Tuscany region.
Blends
Vin Santo min. 60% Trebbiano Toscano and/or Malvasia, pure or with the addition of red and white grape berries originating from other grape varieties suitable for cultivation in the concerned area, max. 40%. Vin Santo Occhio di Pernice (incl. Riserva): min. 80% Sangiovese, pure or with the addition of white and red grape berries originating from other grape varieties suitable for cultivation in the concerned area, max. 20%.
Description of product typologies
Vin Santo del Chianti Classico PDO is straw-yellow in colour, tending towards golden and intense amber; the nose releases intense, pleasing and elegant aromas which open with notes of raisin, dried fig and apricot jam, followed by aromas of candied-fruit, almond, citrus peel and vanilla; the palate corresponds to the nose, with a sweet and smooth attack that is balanced with alcohol, a full-body, intense flavours, a pleasant freshness and a persistent finish reminiscent of dried fig, honey, apricot jam and almond. Vin Santo del Chianti Classico PDO Vin Santo Occhio di Pernice is soft to intense pink in colour; the nose opens with embracing, ethereal and fruity fragrances which reveal a floral and spicy background; it is sweet, smooth and velvety on the palate. Vin Santo del Chianti Classico PDO wines must be produced with traditional vinification methods, which involve the natural drying of carefully selected grapes in suitable environments, with the possibility of partial drying with the aid of ventilated air; the following vinification, preservation and aging processes must take place in wooden recipients kegs with a capacity of no more than 3 hectolitres, for a minimum period of 24 months, commencing October 1st of the year following that in which the grapes were harvested. Vin Santo del Chianti Classico PDO and Vin Santo del Chianti Classico PDO Occhio di Pernice wines cannot be made available for consumption before November 1st of the third year following that in which the grapes were produced; it is mandatory for the year in which the grapes were produced to be indicated on the label. At the termination of the aging period, Vin Santo del Chianti Classico PDO wine must have a minimum alcohol level of 16%.
