Production Area
The production area of Valpolicella Ripasso PDO is within all or parts of the territory of 19 municipalities in the Province of Verona, in the Veneto region.
Description of product typologies
Valpolicella Ripasso PDO is red, tending towards garnet with ageing; the nose is harmonious, rich and full-bodied, with notes of red fruity and a smooth spiciness; it is velvety on the palate, leaving a persistent flavour in the mouth, with good body, at the same time offering a few bitter notes and slight sapidity. It can display Superiore on the label. Grapes destined for the production of Valpolicella Ripasso PDO Superiore wines must ensure that the wine has a minimum natural alcohol level of 11% vol. Valpolicella Ripasso PDO wines are obtained through the secondary fermentation of wines which are suitable for being made into Valpolicella PDO wines (all types) on the residual dregs from the production of Recioto della Valpolicella and/or Amarone della Valpolicella wines. Valpolicella Ripasso PDO wines (including those with various specifications) cannot be released for consumption before January 1st of the second year following that in which the grapes were produced.
