Description
The Thüringer Rostbratwurst PGI is a sausage made of pork deprived of fat, specifically the pig's cheek lard without the rind, with possible addition of veal or beef without tendons. The mixture of the seasonings varies: in addition to salt and pepper, cumin, marjoram and garlic are used.
Production Area
The production area of the Thüringer Rostbratwurst PGI is limited to the geographic area of the federal state of Thuringia.
Production Method
The tendons are removed from the meat, it is then hulled and minced, until a paste of average grain is achieved, to which the seasoning is added. Once all is mixed, it is put inside natural pig or ovine casings. The sausages are then twisted and divided in parts of 20 cm each and cooked at 75°C.
Appearance and Flavour
The Thüringer Rostbratwurst PGI is at least 15-20 cm long, has a medium fine grain, natural casings and a strong aroma.
History
The Thüringer Rostbratwurst PGI boasts a secular tradition. It is cited for the first time in a document of 1404, and the oldest recipes date back to 1613. Even Martin Luther and Goethe speak highly of it. Today, these sausages are part of the assortment of almost all sausage and meat product producers in Thuringia and can be tasted everywhere in the region.
Gastronomy
The Thüringer Rostbratwurst PGI should be kept in the refrigerator, also for longer periods of time. It is consumed roasted. In fact, the traditional preparation method of the Thüringer Rostbratwurst PGI is using the wood grill, which gives the product a positively tasty flavour. And the serving with mustard is not to be missed, all with grilled bread and cold beer.

The product is sold as Thüringer Rostbratwurst PGI. It is marketed fresh and packed individually or in more units, vacuum-packed or in glass jars.
