Description
Terre Aurunche PDO extra virgin olive oil is obtained from the indigenous Sessana olive variety, which must make up at least 70% of the groves, and from the Corniola, Itrana and Tonacella varieties, which must make up at least 30%, individually or mixed.
Production Area
The production area of Terre Aurunche PDO extra virgin olive oil is within the entire territory of 18 municipalities in the Province of Caserta, in the Campania region.
Production Method
The harvesting of the olives, which must be concluded by December 31st of each year, can be carried out either by hand or with the help of mechanical harvesters. Before milling, which must take place within two days of the harvest, the olives are stored in containers in cool and ventilated rooms, sheltered from atmospheric agents such as water and wind. The olive paste is malaxed for up to 40 minutes, at a temperature of no more than 27°C. The product is kept in stainless steel barrels with hermetic lids in low-lit and dry storage areas.
Appearance and Flavour
Terre Aurunche PDO extra virgin olive oil ranges from straw yellow to green in colour, varying in intensity. It has a mild to strong fruity aroma and a well-balanced bitter and piquant flavour, with characteristic notes of artichoke and a hint of almonds.
History
In the Territori et Oliveti A.G.P. manuscript, most likely written by several ecclesiastical administrations, there are registrations of activities regarding the possession of various farm lands starting from 1680. The importance of the olive groves is demonstrated by the classifications present in the manuscript, which put land destined for the cultivation of olives into its own independent and distinct category. From an economic point of view, the olive trees were so important in the area that traditionally they were grown by families, often representing the only indication of wealth or poverty. In fact, it is noted that in marriages between farmers, the bride was often evaluated according to the bushel of oil given to the family of the future groom. The bushel was a specific unit of measurement used exclusively for olive oil, and was the equivalent to 10 or 11 litres of oil, depending on the area.
Gastronomy
Terre Aurunche PDO extra virgin olive oil is an easily perishable product that must be preserved correctly in order to maintain its organoleptic characteristics. It should be kept in a cool place away from direct light or heat sources. It should be consumed within six months of pressing in order to enjoy the full potential of its flavour and to benefit from its rich polyphenol content. Due to its fruity aroma and bitter piquant flavour, it is the perfect ingredient for many traditional regional Italian dishes.
Marketing
The product is marketed as Terre Aurunche PDO extra virgin olive oil. It is sold in enamelled terracotta, glass or tin plate recipients, with a capacity of no more than 5 litres, and in single-dose sachets. The label must indicate the year of production.

Terre Aurunche PDO olive oil is extremely typical of the production area as it is obtained from indigenous cultivars; it is also distinguished by its balanced polyphenol content and lower maximum acidity in respect to other olive oils.
