S. Anna di Isola Capo Rizzuto PDO Rosso is red, varying depending on the age of the wine, and has a well-defined purplish rim; the nose is complex and variegated, with sensations ranging from small berries to wet soil and spices like pepper and nutmeg, as well as slightly irony and minerally traces; it is fresh, balanced and harmonious on the palate, with good structure, elegant tannins, fruity and sapid undertones and a long fruity persistence. S. Anna di Isola Capo Rizzuto PDO Rosato is pink, ranging from soft rose-petal to coral; the nose bursts with fruity, vinous and characteristic notes and is extremely lively, yet elegant at the same time; it is dry, harmonious and rounded on the palate, with a well-defined acid backbone. Grapes destined for vinification must ensure a minimum natural alcohol level of 11.5% vol. The vinification processes for S.
