The Recioto della Valpolicella PDO is reserved for the following types of wine: Sweet Red and Red Spumante. The Designation also incorporates two geographical specifications.
Production Area
The production area of Recioto della Valpolicella PDO is entirely or partly within the territory of 19 municipalities in the Province of Verona, in the Veneto region.
Description of product typologies
Recioto della Valpolicella PDO Rosso Dolce is deep red, at times with purple reflections and tending towards garnet red with ageing; the nose displays sweet fragrances, with sensations of jammy blackcurrant, stuffed figs, sweet liquorice, tobacco, vanilla and chocolate; it is well-structured, warm, smooth and harmoniously tannic on the palate. Recioto della Valpolicella PDO Spumante Rosso is bright deep ruby red, at times with purple reflections, and has a fine, persistent perlage; the nose is sweet and intense with hints of small red fruit, liquorice, cocoa and tobacco; it is sweet, delicate, full and warm on the palate, with generous persistence. Grapes destined for the production of Recioto della Valpolicella PDO wines must be dried in suitable environments. The use of air conditioning systems is permitted on the condition that they operate at a similar temperature to that found during traditional drying processes; the use of any kind of dehumidifying system that operates with the aid of heat is not permitted. The dried grapes cannot be vinified before December 1st of the year in which the grapes were produced; however, in the event of particular climatic conditions, the Veneto region may, following a documented request to the protection Consortium, authorise the vinification process to start before December 1st.
