Description
The Poniente de Granada PDO extra virgin olive oil is obtained from Picudo, Picual or Marteño, Hojiblanca, Lucio, Nevadillo de Alhama de Granada and Loaime varieties of olive of the Olea europea L. varieties.
Production Area
The production area of Poniente de Granada PDO extra virgin olive oil is located in the western part of the province of Granada in the Autonomous Community of Andalusia.
Production Method
The methods used for the harvesting of the olive include mechanical or manual shaking or both. The olives must be pressed within 48 hours. After they are crushed, which is done using the continuous cycle method, they are decanted by centrifugation for 6 hours or by gravitation for 36 hours. Storing and stabilizing is carried out in stainless steel recipients, or, in any case, in containers which do not alter the quality of the oil.
Appearance and Flavour
Poniente de Granada PDO extra virgin olive oil is mild flavoured oil with a fruity aroma, relatively stable and slightly pungent and spicy. The colour varies depending on the time of harvest from a greenish yellow to golden yellow.
History
The earliest records concerning the production of Poniente de Granada PDO extra virgin olive oil date back to the 16th to 17th centuries. In 1586, an official document was published listing the laws pertaining to olive mills and these were to remain in force until the 18th century.
Gastronomy
Extra virgin olive oil is easily degradable and must be stored correctly to maintain its organoleptic qualities. It should therefore be kept in a cool, dark place at a temperature between 14 and 18°C, away from sources of heat and away from other foods which produce odours. It should be used within four to six months of pressing to enjoy its flavour at its best. Poniente de Granada PDO extra virgin olive oil can be used as a condiment or as an ingredient in a variety of dishes. It is an ideal condiment on salads and vegetables and meat and fish dishes.
Marketing
The product is sold as Poniente de Granada PDO. It is sold in opaque glass bottles or tin containers.
