The Parrina PDO is reserved for the following typologies of wine: White, Red, Rosé and Vin Santo. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Parrina PDO is within parts of the Municipality of Orbetello in the Province of Grosseto, in the Tuscany region.
Blends
White, Vin Santo: 10-30% Trebbiano Toscano, 30-50% Ansonica, 20-40% Vermentino, max. 20% Chardonnay and/or Sauvignon; grape berries similar in colour and originating from other grape varieties suitable for cultivation in the concerned area may be used for the remaining part.Red (incl. Riserva), Rosé: min. 70% Sangiovese, pure or with the addition of grape berries similar in colour and originating from other grape varieties suitable for cultivation in the concerned area, max. 30%.
Description of product typologies
Parrina PDO Bianco is straw-yellow in colour with golden highlights; the nose is delicate and slightly aromatic, with aromas of medlar and hawthorn flowers; it is sapid and velvety on the palate, with a bitter aftertaste. Parrina PDO Rosso has a full and intense ruby-red colour; the nose is delicate, with aromas of typical Mediterranean spontaneous plants and fruity notes of blueberry; it is dry, warm, harmonious and velvety on the palate, with a long fruity finish. It can display Riserva on the label if the wine has been aged for a minimum period of 2 years, of which at least one year must be in wooden barrels and at least 3 months in bottles. The aging period commences November 1st of the year in which the grapes were produced. Parrina PDO Rosé has a lively pink colour; the nose displays elegant notes of rose petals and red fruit; it is dry, rounded, fresh, harmonious and pleasantly acidulous on the palate.Parrina PDO Vin Santo has an intense amber colour; the nose offers aromas of hazelnut, dates, dried fig, honey and caramel; it is dense, creamy, sapid and mineral on the palate, with slightly citrusy hints. The vinification method used for the production of Parrina PDO Vin Santo wine involves the drying of the grapes, which can only then be mashed between December 1st of the year in which the grapes were harvested and March 31st of the following year; partial drying of the grapes must take place in suitable environments and the aid of ventilated air is permitted for partial dehydration. The preservation and aging of Parrina PDO Vin Santo wines must take place in wooden recipients kegs with a capacity of no more than 3 hectolitres, for a period of at least 2 years; the wine can be made available for consumption from November 1st of the third year following that in which the grapes were produced. Parrina PDO Rosso and Parrina PDO Rosé wines cannot be made available for consumption before March 1st of the year following that in which the grapes were produced; for Parrina PDO Bianco the date is December 31st of the year in which the grapes were produced.
Grape variety specifications
The Parrina PDO may display the specifications of the following grape varieties. From white grape varieties: min. 85% Vermentino, Chardonnay, Sauvignon, pure or with the addition of grape berries similar in colour and originating from other grape varieties suitable for cultivation in the concerned area, max. 10%. From red grape varieties: min. 85% Sangiovese (including Riserva), Merlot, Cabernet Sauvignon, pure or with the addition of grape berries similar in colour and originating from other grape varieties suitable for cultivation in the concerned area, max. 15%, with the exclusion of Aleatico.The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. It is mandatory for Parrina PDO Sangiovese Riserva wine to be aged for a minimum of 2 years, of which at least one year must be in wooden barrels and at least 3 months in bottles. The aging period commences November 1st of the year in which the grapes were produced. Parrina PDO Sangiovese, Parrina PDO Cabernet Sauvignon and Parrina PDO Merlot wines cannot be made available for consumption before March 1st of the year following that of the grape harvest; for Parrina PDO Chardonnay, Parrina PDO Sauvignon and Parrina PDO Vermentino wines the date is December 31st of the year in which the grapes were produced.
