Red, Spumante (incl. Semi-Sparkling, Sweet): 85-100% Malvasia di Schierano or Malvasia Nera Lunga, max. 15% Freisa.
Description of product typologies
Malvasia di Castelnuovo Don Bosco PDO Rosso is bright cherry-red in colour; the nose bursts with delicate fruity and floral aromas, with notes of rose and raspberry and at times iris, wisteria and woodland berries; it is pleasantly sweet, fresh and harmonious on the palate, with good aromatic persistence that is complimented in the finish by fruity notes and delicate tannins. On opening, Malvasia di Castelnuovo Don Bosco PDO Rosso wine may be characterised by the development of carbon dioxide, which derives from too much pressure being created by the carbon dioxide solution during fermentation, which when kept at 20°C in closed recipients, is no higher than 1,8 bars in excess of atmospheric pressure. Malvasia di Castelnuovo Don Bosco PDO Spumante is pink in colour, varying in intensity and with fine and persistent foam; the nose bursts with the fragrant aroma of the original grape in delicately fruity notes; it is sweet and slightly aromatic on the palate.
