Lambrusco Grasparossa di Castelvetro PDO Rosso Frizzante is ruby red with purplish reflections, and has evanescent foam with rims of the same colour; the nose is vinous, intense, fruity, fragrant and complex, reminiscent of the grape’s aroma; it is harmonious, pleasantly vinous and slightly fruity on the palate, with balanced acidity and an enjoyable aftertaste of dried fruit. Lambrusco Grasparossa di Castelvetro PDO Rosato Frizzante is pink, varying in intensity, and has lively, evanescent foam; the nose is pleasant and rich with fruity undertones; it is bone dry or dry, mouth-filling or medium-dry on the palate, sweetish, soft, fresh and intensely sapid. Lambrusco Grasparossa di Castelvetro PDO Spumante Rosso is intense ruby red and has lively foam; the nose is ample and complex, gentle and rich with floral notes; it is bone dry or dry, mouth-filling or medium-dry on the palate, sweetish, soft, fresh and intensely sapid. Lambrusco Grasparossa di Castelvetro PDO Spumante Rosato is pink, varying in intensity, and has lively, evanescent foam; the nose is rich with fruity aromas; it is bone dry or dry, mouth-filling or medium-dry on the palate, sweetish, soft, fresh and intensely sapid. The vinification and production processes of sparkling and semi-sparkling wines must take place within the territory of the Province of Modena. Lambrusco Grasparossa di Castelvetro PDO Spumante and Lambrusco Grasparossa di Castelvetro PDO Frizzante wines must be obtained by natural fermentation/secondary fermentation in the bottle or natural fermentation/secondary fermentation in autoclaves, according to that provided for by European and national regulations.
Additional specifications
It is mandatory for Lambrusco Grasparossa di Castelvetro PDO Frizzante and Lambrusco Grasparossa di Castelvetro PDO Spumante wines to indicate the residual sugar content on the label. Lambrusco Grasparossa di Castelvetro PDO Frizzante and Spumante rosé wines must display “Rosato” on the label. Rosé Spumante wines can also use the term “Rosé”.
