Production Area
The production area of Kielbasa Lisiecka PGI covers the municipal areas of Czernichów and Liszki in the district of Krakow, in region Malopolska.
Production Method
85% of the pork meat used has to belong to class I, meaning it has to be lean, free from fat, tendons and connective tissue. The remaining percentage can consists of different classes and variable amounts. The class I cuts are sliced in cubes of 3-5 cm and the all meats have to undergo the treatment with salt and saltpetre. This process is carried on separately for the different classes of meat and last 2-4 days. Later the meats which do not belong to class I are minced twice in order to obtain grains measuring a few millimetres. The minced meats from the different classes are then mixed until obtaining compact dough, ready for filling a natural or artificial casing creating the characteristic crowns. Then they are dried, smoked and cooked in oven, in suitable rooms fed with wood, for about 3.5-4.5 hours.
Appearance and Flavour
Kielbasa Lisiecka PGI has the shape of a crown, about 35-40 cm long, and the slice is almost round with a diameter of about 52 mm. The colour is dark brown, like all the smoked products. The dough is consistent and compact, whilst the flavour is spicy with garlic, salt and pepper. The aroma is smoked.
History
The cities of Czernichów and Liszki boast a long tradition in meat processing: in fact, they have become since the middle of the 19th century the second important pole for the production of sausages in Poland. These activities developed and were spread largely until the Second World War, when, despite prohibitions and confiscations, the butchers have continued to produce and sell their sausages passing on constantly this tradition.
Gastronomy
Kielbasa Lisiecka PGI has to be stored either in a fresh and dry place or in the least cold compartment of refrigerator. It is very good when eaten with bread, but it is also used as an ingredient for many recipes. For example, it can be found in the most important dish of Polish cuisine, the bigos which are made of meat, sauerkraut and spices.

The peculiarity of Kielbasa Lisiecka PGI lies in the recipe which includes different types of meat, minced in different sizes. Indeed, the slice show coarser pieces surrounded by finer dough.
