Description
The Hofer Rindfleischwurst PGI is a sausage, raw and spreadable, obtained from the process of beef and pork.
Production Area
The production area of Hofer Rindfleischwurst PGI covers exclusively the urban area and the district of Hof, in the Federal State of Bavaria.
Production Method
Only fresh meat is used; therefore excluding seasoned or frost meat. It's mostly lean beef with only 30% of pork or pig back lard. Anyway, in both cases the lean part comes from the thigh. Plus, the cuts must come from adult animals. The meat is finely cut and mixed with salt and ground pepper, to which other spices may be added to obtain a more characteristic flavour. Small percentages of sodium nitrate and ascorbic acid are added to the mix. Then an artificial casing is filled with the mix and the obtained sausage is cold smoked (maximum temperature: 30°C) on beech wood.
Appearance and Flavour
Hofer Rindfleischwurst PGI has the shape of a cylinder with a diameter from 40 to 55 mm and a lenght up to 50 cm. It may weight from 150 to 180 gr. The mix is deep red in colour with a uniform consistency. The flavour is lightly spiced and smoked, with pepper hints.
History
The history of Hofer Rindfleischwurst PGI has started in the middle of 1950s, when the master grocer of the city of Hof, Hans Millitzer, created the recipe of a fresh sausage from beef. But it success and reputation is due above all to his trainee Gottfired Rädlein who carried on the tradition of the company that he founded in 1962. Extremely appreciated, it won many prizes in competitions dedicated to meat-based preparations and, in 1993, it was added to the Leitsätze des Deutschen Lebensmittelbuches (German food code). Famous as a local speciality, it's required also out of the Bavaria borders.
Gastronomy
Hofer Rindfleischwurst PGI is a very fresh sausage and has to be consumed within a short time, maximum within 2-3 days, and has to be stored in refrigerator. When vacuum packed, it can last for longer, but not more than 10 days and always stored in refrigerator.

The product is sold as Hofer Rindfleischwurst PGI. It is sold loose or vacuum packed.
