Est! Est!! Est!!! di Montefiascone PDO Bianco is a fairly intense limpid yellow colour; the nose offers fragrances of white flowers, exotic fruit and hay, with mineral undertones; it is velvety and sapid on the palate, with a persistent aromatic aftertaste. It can display Classico on the label. Est! Est!! Est!!! di Montefiascone PDO Spumante is pale straw-yellow with fine and persistent foam; the nose is delicately fruity; the fruitiness of the nose returns on the palate and it is dry and slightly aromatic. The gasification of the Spumante wines must be obtained through the natural fermentation of the musts or wines, observing the general production and designation regulations for Spumante wines. Vinification and gasification must take place within the production area.
