Colli Euganei Fior d’Arancio PDO or Fior d’Arancio Colli Euganei PDO Bianco is straw-yellow, varying in intensity; the nose displays aromatic and characteristic sensations; it is intense on the palate, ranging from dry to sweet. Colli Euganei Fior d’Arancio PDO or Fior d’Arancio Colli Euganei PDO Spumante is straw-yellow, varying in intensity, with smooth, consistent foam; the nose is intense, persistent and typical of the grape, which is reminiscent of citron, ripe white peach, orange blossom flowers, hawthorn and sage; it is sweet and balanced on the palate, pleasantly aromatic, with persistent freshness and a citrusy finish. Colli Euganei Fior d’Arancio PDO or Fior d’Arancio Colli Euganei PDO Passito varies from straw-yellow to golden yellow, at times amber; the nose is elegant, intense and characteristic; it is sweet, aromatic and persistent on the palate. It cannot be released for consumption before a maturing and ageing period of at least 1 year, commencing November 1st of the year in which the grapes were produced. During this process, which precedes bottling, Passito wine can undergo slow fermentation, which is slower during the winter months.
