The Colli Cimini PGI is reserved for the following types of wine: White, Red, Rosé, Passito, Late Harvest, White Novello and Red Novello. The Indication also incorporates numerous grape variety specifications.
Production Area
The production area of Colli Cimini PGI is within the territory of the municipalities of Bassano in Teverina, Canepina, Capranica, Caprarola, Carbognano, Corchiano, Fabrica di Roma, Gallese, Ronciglione, Seriano nel Cimino, Sutri, Vallerano, Vasanello, Vignanello, in the Province of Viterbo, in the Lazio region.
Description of product typologies
Colli Cimini PGI Bianco, alone or with specification of grape variety, is yellow, at times tending towards golden or greenish yellow; it offers varying degrees of fruity fragrances on the nose, based on which grape varieties are used; it ranges from dry to sweet on the palate, typical and sapid, at times lively. It can also be a semi-sparkling wine. Colli Cimini PGI Rosso, alone or with specification of grape variety, is ruby red, varying in intensity and tending towards garnet red with ageing; it is delicate on the nose, displaying characteristic fragrances of red fruit, traces of spices and aromatic herbs, with aromatic elegance deriving from the grape varieties used; it is dry on the palate, with dry to sweet tones, harmonious, typical, at times lively, with good body. It can also be a semi-sparkling wine. Colli Cimini PGI Rosato, alone or with specification of grape variety, is cherry-pink, varying in intensity; the nose displays delicate fruity fragrances; it is dry, harmonious and fresh on the palate, at times lively, with the characteristics of the grape variety of origin. It can also be a semi-sparkling wine. Colli Cimini PGI Passito is yellow, tending towards amber with ageing; it displays intense fruity fragrances on the nose; it is sweet and sapid on the palate, with the characteristics of the grape variety of origin. Colli Cimini PGI Vendemmia Tardiva, alone or with specification of grape variety, is golden yellow; it displays intense fruity fragrances on the nose; it ranges from dry to sweet on the palate and is sapid, with the characteristics of the grape variety of origin. Colli Cimini PGI Novello Bianco, alone or with specification of grape variety, is yellow, at times tending towards golden or greenish yellow; it displays intense fruity fragrances on the nose; it ranges from dry to sweet on the palate and is sapid, at times lively. Colli Cimini PGI Novello Rosso, alone or with specification of grape variety, is ruby red; the nose reveals complex fruity notes; it ranges from dry to sweet on the palate and is harmonious, typical, and at times lively.
Grape variety specifications
The Colli Cimini PGI with the specification of one of the grape varieties suitable for cultivation in the Lazio region, is reserved for wines obtained from grapes originating from vineyards on the producer’s land made up of at least 85% of the corresponding grape variety. Other grape varieties suitable for cultivation in the Lazio region can be used, pure or combined, to produce the above-mentioned musts and wines, max. 15%. The Colli Cimini PGI with specification of two or three grape varieties, is reserved for wines obtained from grapes originating from vineyards on the producer’s land made up of the corresponding varieties, on the condition that the wine derives exclusively from grapes produced by the two or three specified varieties; the grape variety specifications must appear on the label in descending order with respect to the actual percentage of grapes obtained from them. Colli Cimini PGI wines with specification of grape variety must display the organoleptic properties of the specified grape variety, as well as the specific characteristics indicated for wines of the same colour.
