Clare Island Salmon PGI production area is located in the sea surrounding Clare Island, in the outer part of Clew Bay, County Mayo, in the Connacht province.
Production Method
Each spring, salmon are transferred to large flexible cages anchored along Clare Island, where they are looked after for two years. Salmon are fed according to a special diet, made of natural ingredients produced onsite. Salmon are protected against the dangers of storms or predators. When they reach the right size to be sold, they are collected and brought to land, where they are washed, selected, weighed and put in ice for transport.
Appearance and Flavour
Clare Island Salmon PGI is characterised by hard flesh with low fat content; the tail and body shapes are similar to those of the wild salmon.
