Production Area
The production area of Carignano del Sulcis PDO is within the territory of numerous municipalities in the Provinces of Sud Sardegna, in the Sardinia region.
Blends
Red (incl. Superiore, Riserva), Rosé, Passito, Novello: min. 85% Carignano, pure or with the addition of non-aromatic grape berries similar in colour and originating from other grape varieties suitable for cultivation in the concerned area, max. 15%.
Description of product typologies
Carignano del Sulcis PDO Rosso has a ruby-red colour, varying in intensity; it displays expressive fragrances of red flowers, rose, fruits of the forest and lavender on the nose; it is smooth and fresh on the palate. It can display Riserva and Superiore on the label. Carignano del Sulcis PDO Rosso must have matured for at least 40 days, commencing January 1st of the year following that in which the grapes were produced. Carignano del Sulcis PDO Rosé is pink in colour, varying in intensity; it is fruity, floral and herbaceous on the nose; it is dry, harmonious and characteristic on the palate.Carignano del Sulcis PDO Passito varies from red to amber in colour; the nose has embracing fragrances of mellow fruit, sour cherry jam and roses which blend with a persistent finish of spices and pansy; it is velvety, and embracing on the palate, rich with aromas of red fruit and honey.After careful selection, the grapes destined for vinification must be dried naturally and cannot be mashed before October 10th of the harvest year and later than March 31st of the following year; preservation and aging must take place in recipients with a capacity of no more than 10 hectolitres, for a period of at least 6 months, three months of which must be in bottles. The aging period commences May 1st of the year following that in which the grapes were produced and it cannot be made available for consumption before November 1st.Carignano del Sulcis PDO Novello is ruby-red in colour; the nose displays rich fruity notes ranging from raspberry to redcurrants, with aftertastes of peony in bloom; the flavours on the palate open with lively, sapid and dry notes.

The geographic name “Sardegna” (Sardinia) may precede the Carignano del Sulcis PDO designation, as provided for by ministerial decree.
