Description of product typologies
Bianchello del Metauro PDO Bianco is straw-yellow in colour, with hues of green; it displays a fairly persistent, mild and delicate fragrance of fresh fruit and white spring flowers on the nose; on the palate it is dry, very fresh, harmonious and pleasing, with an extremely delicate hint of alcohol. Bianchello del Metauro PDO Spumante is straw-yellow in colour, varying in intensity, with a fine and persistent foam; the bouquet is delicate, fine, ample and motley on the nose; it is extra-dry to brut and sapid, fresh, fine and harmonious on the palate. Bianchello del Metauro PDO Passito is straw-yellow to intense amber in colour; it is characteristic and intense on the nose; on the palate it is sweet, harmonious and velvety.For the production of Bianchello del Metauro PDO Passito, the grapes must have undergone a drying period lasting no longer than March 30th of the year following that of the harvest; the vinification process must have been completed before November 1st of the year in which the grapes were produced. The Passito typology cannot be made available for consumption before December 1st of the year following that in which the grapes were produced. Aging must take place within the same area as vinification.
