The specification Riserva can be displayed on the label if the wine has undergone a minimum ageing period of 2 years and is released for consumption with a minimum alcohol level of at least 12.5% vol. The ageing period commences November 1st of the year in which the grapes are produced. To transform the grapes destined for the production of Alezio PDO Rosé, a traditional method of white vinification must be used after limited maceration. The residue of grapes destined for the production of the Rosé cannot be used for the vinification of Alezio PDO Rosso.
