Description
The Aceite del Baix Ebre-Montsià PDO is an extra virgin olive oil obtained from the following three autochthonic varieties of Olea europea L. olives: Morruda or Morrut, Sevillenca and Farga.
Production Area
The production area of Aceite del Baix Ebre-Montsià PDO is located in several areas around Baix Ebre and Montsià, which are both in the province of Tarragon in the south of the Autonomous Community of Catalonia.
Production Method
The olives are harvested by the beating method from the middle of November to the end of February. They are transported to the mill where they are cleaned and washed. No more than 48 hours can pass before they are pressed. The oil is extracted mechanically for between 90 and 120 minutes at a maximum temperature of 35°C.
Appearance and Flavour
Aceite del Baix Ebre-Montsià PDO has a clear and limpid appearance, it is neither misty nor torpid and the colour varies from a greenish yellow to a golden yellow depending on the time of the harvest. The taste is fruity with a sweeter after taste with hints of apple, almond and plane trees; it is also mildly bitter and spicy.
History
According to historical evidence, the olive tree was introduced to the production area of Aceite del Baix Ebre-Montsià PDO by the Greeks and later by the Romans. However, the production of this olive oil dates back to the period of Arab domination. Laws pertaining to olive mills and presses date back to the Middle Ages. An official document dated 1353 shows that the majority of the population owned olive orchards and vineyards. Only in the 18th century the commerce of olive oil became the principal local economy.
Gastronomy
Extra virgin olive oil is easily degradable and must be stored correctly to maintain its organoleptic qualities. It should therefore be kept in a cool, dark place at a temperature between 14 and 18°C, away from sources of heat and away from other foods which produce odours. It should be used within four to six months of pressing to enjoy its flavour at its best. The Aceite del Baix Ebre-Montsià PDO is widely used in many dishes as it enhances rather than masks their aroma and flavour.

The product is sold as Aceite del Baix Ebre-Montsià PDO. It comes in glass or metal containers no bigger than 5 l.
