Description of product typologies
Recioto di Soave PDO Bianco (Dolce) is golden-yellow to amber in colour; the nose offers fragrances of sultana, acacia honey, dried fig, vanilla and roasted almond; it is intense, persistent, velvety and full-bodied on the palate, with a long and slightly bitter finish. It can display Classico on the label.Recioto di Soave PDO Spumante is golden-yellow in colour, varying in intensity, and has a fine and persistent perlage; the nose is rich with vanilla, almond, honey and freshly baked yeasts; it is full-bodied, sweet and velvety on the palate, with traces of vanilla and roasted almonds. The grapes destined for the production of Recioto di Soave wines are hand-picked and the best bunches are selected; they are then dried on trellises where they are periodically controlled for damage. Fermentation takes place in small barrels for a period of between one to six months. The grapes may also be dried with the aid of environmental conditioning systems, on the condition that they operate at a similar temperature to that found during traditional drying processes.
