Offida PDO Rosso is ruby red, tending towards garnet red with ageing; the nose offers aromas of cherry and blackberry, with notes of liquorice and graphite and faint balsamic hints of rosemary and thyme; it is severe and structured on the palate, displaying very fine, smooth and rounded tannins. The organoleptic properties of Offida PDO Bianco, Offida PDO Spumante, Offida PDO Passito and Offida PDO Vin Santo wines with specification of grape variety are typical of the grapes and terroir of origin. Offida PDO Rosso wine can only be released for consumption after it has been aged for a mandatory period of at least 24 months, of which a minimum of 12 months must be in wood and 3 months maturing in the bottle; the ageing period commences November 1st of the year in which the grapes were harvested.
