Description
The Konservolia Stylidas PDO is a table olive obtained from olive trees of the variety Konservolia.
Production Area
The production area of the table olive Konservolia Stylidas PDO is within the administrative boundaries of the Phthiotis prefecture, specifically in the municipal areas of: Glyfa, Vathykilo, Pelasgia, Miles, Spartia, Achladi, Raches, Palaiokerasia, Achinos, Karavomylos, Anidro, Neraida, Stylida, Avlaki, Agia Marina, Limogardi and Longhitsi of Phthiotis, in the Central Greece region.
Production Method
The olives are cultivated on a terrain that is submitted to periodic fertilizing with nitrogen, phosphorus and potassium. The terrain is watered three to five times from the month of July through to September. Gathering traditionally takes place by hand, directly from the tree during the initial stage of ripening, when the colour of the olives is green, and during the final ripening stage, when their colour is black. Transportation is done in plastic crates of 25 kg. Finally, to remove the bitter taste, the black olives are treated with a sodium chloride solution, and the green ones with a caustic soda solution; subsequently they are both pickled. The fight against the olive fly is done with the spraying of baits from the soil, using biologic methods, or without any treatment.
Appearance and Flavour
The Konservolia Stylidas PDO is a table olive with an average weight of 7 gr. Its colour is an intense black for the fully ripe olives, and green-yellow for those picked earlier. The body is crunchy (it detaches easily from the nucleus) and the flavour is fruity.
History
The history of the table olive Konservolia Stylidas PDO is linked to the long-standing tradition of the olive tree culture in Greece, which is evidenced in historical sources and archaeological finds, assigning ancient origins to this cultivation.
Gastronomy

Once opened, it should be consumed within a few days, making sure to keep the olives immersed in the packaging liquid, at a cool temperature and away from direct light. It is served with aperitifs, in salads and in many other gastronomic preparations.
