The Arcole PDO is reserved for the following typologies of wine: White, Red, Rosé, Spumante, White Passito, and Nero. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Arcole PDO is within the territory of numerous municipalities in the provinces of Vicenza and Verona, in the Veneto region.
Blends
White (incl. Semi-Sparkling), Spumante, Passito: min. 50% Garganega, pure or with the addition of grape berries similar in colour and non-aromatic, originating from other grape varieties suitable for cultivation in the concerned area, max. 50%. Red (incl. Riserva and Semi-Sparkling), Rosé (incl. Sparkling), Nero: min. 50% Merlot, pure or with the addition of grape berries similar in colour and non-aromatic, originating from other grape varieties suitable for cultivation in the concerned area, max. 50%.
Description of product typologies
Arcole PDO Bianco is pale straw-yellow in colour, with greenish reflections; the fragrance is mildly intense on the nose, with notes of acacia flowers and mild fruit; on the palate it is thin, citrusy, lively and sapid. It can also be a Semi-Sparkling wine. Arcole PDO Rosso is light ruby-red in colour; pleasing and characteristically fruity on the nose, with notes of raspberry and cherry; it is dry and slightly tannic on the palate. It can also be a Semi-Sparkling wine and display Riserva on the label if it has undergone a minimum period of aging of at least two years, of which at least 3 months in wooden barrels; the aging period commences November 1st of the year in which the grapes were produced. Arcole PDO Rosé is bright, pale ruby-red in colour; characteristic on the nose, with delicate scents of cherry that harmoniously blend with a slight perception of peach flower; medium-bodied and harmonious on the palate. It can also be a Semi-Sparkling wine. Arcole PDO Spumante is straw-yellow in colour, varying in intensity, with a fine and persistent perlage; the fragrance is characteristic and slightly fruity on the nose; it is sapid, characteristic and delicate on the palate in the extra brut, brut, extra dry, dry, semi-sweet and sweet typologies. Arcole PDO Bianco Passito is golden yellow in colour, varying in intensity; the fragrance is pleasing on the nose, with intense fruity; it is amiable, sweet and harmonious on the palate, full-bodied with hints of wood. Arcole PDO Nero is intense ruby-red in colour, tending towards garnet with aging; the fragrance is characteristic and delicate on the nose; it is full, velvety and warm on the palate, with good structure and persistence. Arcole PDO wines with indication of grape variety have the organoleptic characteristics typical of the grapes and terroir of origin.The vinification of grapes destined for the production of Arcole PDO Bianco Passito or Arcole PDO Passito may only take place following natural drying, for a period of no less than 2 months: the use of systems and technologies that do not increase the temperature in respect to the natural process is permitted.The vinification of grapes destined for the production of Arcole PDO Nero may only take place following natural aging of at least 30 days: the use of systems and technologies that do not in any way alter the temperature in respect to the natural process is permitted. Arcole PDO Nero and Arcole PDO Passito (with indication of grape variety) wine cannot be made available for consumption before November 1st of the year following that of the harvest. The wine must be aged for at least 3 months in wooden barrels.
Grape variety specifications
The Arcole PDO may display the specifications of the following grape varieties. From white grape varieties: min. 85% Pinot Grigio, Chardonnay (incl. Semi-Sparkling), pure or with the addition of grape berries similar in colour and non-aromatic, originating from other grape varieties suitable for cultivation in the concerned area, max. 15%.From red grape varieties: min. 85% Merlot (incl. Riserva), pure or with the addition of grape berries similar in colour and non-aromatic, originating from other grape varieties suitable for cultivation in the concerned area, max. 15%.The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin.
Additional specifications
The Arcole PDO designation can be followed by Vigna (Vineyard) with the relative toponym. In the presentation and designations of Arcole PDO Bianco Passito, Arcole PDO Spumante Bianco, Arcole PDO Bianco Frizzante, Arcole PDO Rosso, reference to colour and grape variety can be omitted.
