The Welsh Beef PGI comes from prime cattle which are born and reared in Wales.

Production Method

The cattle are reared extensively on natural grass pastures. They are slaughtered at between 24-48 months of age.

Appearance and Flavour

Welsh Beef PGI is typically red in colour with fat that is yellowish white. The meat is generally well marbled. It is full flavoured and particularly tender and succulent.

History

Gastronomy

Welsh Beef PGI can be kept for a few days on the coldest shelf of the refrigerator. It is eaten cooked and it can be used to prepare many traditional recipes. One of these is the Welsh Beef Wellington, in which meat is cooked with oil until golden-brown on all sides and then it is rolled up with puff pastry and finally oven baked.

Marketing

This beef is only sold as Welsh Beef PGI with clear identification of the brand through labelling or packaging. It is sold fresh as sides or in cuts and joints prepacked in a climate controlled environment to preserve the quality of the meat.
