The Sierra de Cádiz PDO extra virgin olive oil is obtained from Lechín de Sevilla, Manzanilla, Verdial de Huevar, Verdial de Cádiz, Hojiblanca, Picual, Alameña de Montilla and Arbequina varieties of olive.
Production Method
Harvest begins in November and it ends in February or March. The various methods of harvesting are aimed at preventing damage to the olive and, in all cases, preventing it from contact with the ground. The olives are cleaned, washed, pulped and pressed at the mill; the solids are separated from the oil by various means including centrifugation.
Appearance and Flavour
Sierra de Cádiz PDO extra virgin olive oil has a maximum acidity of 0.6% which gives it a mildly bitter and spicy flavour which is pleasantly balanced on the palate. It has a medium to strong fruity aroma of green or ripe olives.

The production area of Sierra de Cádiz PDO extra virgin olive oil covers many municipalities in the provinces of Cadiz and Seville, in the Autonomous Community of Andalusia.
History
The cultivation of olives in the production area of Sierra de Cádiz PDO extra virgin olive oil is an ancient activity; in fact, it was carried out in the period of Arab domination. It is not a coincidence if a town in this area is called Olvera, a name deriving from the Arab word Wubera which indicates the abundance of olive orchards in the area. Another proof of the deeply rooted cultivation of olives is the existence of so many olive mills and cooperatives. The oldest family-run cooperative is in Pruna and has been running since 1886.
Gastronomy
Extra virgin olive oil is easily degradable and must be stored correctly to maintain its organoleptic qualities. It should therefore be kept in a cool, dark place at a temperature between 14 and 18°C, away from sources of heat and away from other foods which produce odours. It should be used within four to six months of pressing to enjoy its flavour at its best. Sierra de Cádiz PDO extra virgin olive oil can be used as a condiment or in the preparation of innumerable dishes. It is ideal on salads and vegetables and in the preparation of meat and fish dishes. As it has quite an intense flavour, it suits fuller flavoured dishes such as pulse based soups and grilled meat.
Marketing
The product is sold as Sierra de Cádiz PDO extra virgin olive oil. It is only sold in glass bottles.
Distinctive Features
Many of the olive groves used for the production of the Sierra de Cádiz PDO extra virgin olive oil are more than a century old and can be found on steep slopes in small fields difficult to reach with mechanical equipment. That is why mules are often used.
