Description of product typologies
Provincia di Pavia PGI Bianco, alone or with specification of variety, is straw-yellow in colour; the nose offers fragrances of lime, kiwi and almond; it is fresh, lively and energetic on the palate, with a fruity and persistent finish. It can also be produced as Semi-Sparkling wine. Provincia di Pavia PGI Rosso Frizzante, alone or with specification of variety, is ruby-red in colour; the nose offers aromatic sensations, blackcurrant and sour cherry and hints of pepper and brushwood; it is smooth and lively on the palate, ranging from dry to sweet, with good structure and persistence. It can be produced as Semi-Sparkling wine. Provincia di Pavia PGI Rosé, alone or with specification of variety, ranges from smooth to cherry-pink in colour; the nose is fruity, intense and persistent; the palate is characteristic, ranging from dry to sweet. It can also be produced as Semi-Sparkling wine. Provincia di Pavia PGI Passito Bianco is yellow to amber in colour; the nose bursts with fruity notes; it is balanced, sweet and full on the palate. Provincia di Pavia PGI Passito Rosso is red in colour, tending towards garnet with aging; the nose is characteristic; it is harmonious, sweet and velvety on the palate. Provincia di Pavia PGI Novello, alone or with specification of grape variety, is ruby-red in colour; the nose offers fruity notes and primary aromas in evolution; it is harmonious and at times lively on the palate, ranging from dry to medium-sweet. With the exception of Pinot Nero, which can be vinified with red or white winemaking methods, and Pinot Grigio, which can be vinified with rosé or white winemaking methods, the colour of Provincia di Pavia PGI wines must correspond with the colour of the grape. Wines with the name of the grape variety specified, with the exception of Croatina, Malvasia, Muscat and Riesling, cannot be produced as Passito or Sweet wine.
Grape variety specifications
The Provincia di Pavia PGI with the specification of one of the grape varieties suitable for cultivation in the concerned area, is reserved for wines that are obtained from grapes originating from vineyard compounds, in a business environment, for at least 85% of the corresponding grape variety. Grapes similar in colour and originating from other grape varieties suitable for cultivation in the concerned area, max. 15%, can contribute, pure or combined, to the production of the above-mentioned musts and wines. Provincia di Pavia PGI wines with specification of one of the grape varieties can also be produced as Semi-Sparkling wine and, limitedly to red wines, as Novello. Provincia di Pavia PGI wines with specification of grape variety must display the organoleptic properties of the grape variety, as well as the indicated characteristics for the typology of wine.
