The Panellets TSG are small sweets that come in many different shapes, principally made of marzipan. The three main types of marzipan used as the base for making Panellets TSG are basic marzipan, standard marzipan and fine marzipan. Panellets TSG with pine nuts, almonds, coconut, hazelnuts, orange, lemon, crème pâtissière, coffee, strawberry or marron glacé are made from basic marzipan while chestnut shaped chocolate Panellets TSG and Osso di Santo Panellets TSG are made from fine marzipan. Lastly, standard marzipan is simply made into many different shapes.
Production Method
Peeled and finely chopped almonds are blended with sugar and eggs to make the basic marzipan. After being left to rest for 24 hours, a variety of ingredients are added to this mixture to make the Panellets TSG listed above. The standard marzipan is made by the addition of powdered almonds and eggs to the basic marzipan and it is then cut into small portions and formed into different shapes. Natural colourings may be added. The most famous Panellets TSG are in the shape of chestnuts. Finally, fine marzipan is made with a mixture of boiled sugar and water to which cream of tartar, powdered and toasted almonds and glucose are added. These ingredients are blended and left to rest for 24 hours, it is then used to make the various alternatives to the standard marzipan. The Panellets TSG in the shape of chestnuts are covered in melted chocolate while the Osso di Santo Panellets TSG are made by rolling the marzipan with a ribbed rolling pin, covering the Panellets in crème pâtissière, cutting them into small pieces and lastly glazing them.

The tradition territory of Panellets TSG originally was Barcelona city, in the Autonomous Community of Cataluña. Then the product spread in the whole area of present Spain.
History
Panellets TSG marzipan sweets were already being made in the 18th century. In that period, fairs took place every year on All Saints day when they were sold and eaten in the streets of Barcelona.
