The Lomnické Suchary PGI are biscuits made of wheat flour, refined sugar, hydrogenated fat, yeast, dried milk and dried or fresh egg yolks, cinnamon, vanilla, orange (lemon) peel and debittered peach and apricot kernels. Ground hazelnuts, almonds and peanuts are added to the individual varieties. The Dia Suchary (diabetic) variety does not contain flavouring and sorbitol is substituted for sugar.

Production Method

The ingredients are placed in the mixer and a previously prepared yeast and potable water are added as well. The paste is mixed until firm dough is obtained which is then cut into small round portions left to rise. After rising, they are rolled into long loaves which are placed in greased warm tins for up to three days to finish rising. After this period, they are baked between 240 and 250°C for 30-45 minutes. Once cooked, the biscuits are left to cool, then they are cut into small slices and rolled in sugar icing after softening. To finish the production process, the biscuits are dried in the oven at a temperature of 190 to 200°C.

Appearance and Flavour

Lomnické Suchary PGI is regularly made into small golden-brown portions with a maximum thickness of 18 mm. They have a sugared exterior and a porous, hard, friable and crunchy consistency. The flavour and aroma depend on the main ingredient used for each variety, but in any case, a hint of orange or lemon peel stands out.

The production area of Lomnické Suchary PGI includes the cities Lomnice nad Popelkou, Vysoké nad Jizerou, Jablonec nad Jizerou of the District of Semily in the region of Liberec.

History

The origins of Lomnické Suchary PGI date back to the first half of the 19th century. Michal Jína started the production of biscuits in 1810 and continued to expand over the second half of the 19th century in Austro-Hungary and other European countries. In 1927, Lomnické suchary was already famous for winning the Grand Prix at the Paris World Exhibition.

Gastronomy

For the best preservation of quality, the Lomnické Suchary PGI must be kept in a dry place since they tend to absorb humidity due to their crumbly texture. They can be consumed as a mid-morning or mid-afternoon snack.

Marketing

The product is sold as Lomnické Suchary PGI in the following varieties: Lomnické Suchary Cukrované (sugared biscuits), Lomnické Suchary Orískové (hazelnut biscuits), Lomnické Suchary Mandlové (almond biscuits), Lomnické Suchary Arasídové (peanut biscuits), Lomnické Suchary Dia (diabetic biscuits). It is marketed in packages wrapped in aluminium foil and placed in printed cardboard boxes.

The unique aroma and flavour of Lomnické Suchary PGI are due to the long-standing cooking traditions they derive from. In fact, biscuits are prepared with the same production process that has been used for over two centuries.
