The Horické Trubicky PGI is a rolled wafer produced using wheat flour for fine confectionery, dried milk, vegetable oil, dried egg yolks, sugar and water. The filling of the wafers is prepared with hardened vegetable fat, sugar, sweetener, cocoa, dried milk, soya flour, vanillin, vanilla, and natural aroma.

Production Method

The ingredients are properly measured to prepare a liquid paste to fill the wafer iron. Then they are cooked in the corresponding rotating wafer maker at a temperature of 150-160°C. After cooking, the wafers are left to settle and finally they are rolled by hand on a hot plate with the help of a cylindrical mould. The wafers are filled mechanically with whipped butter cream or with other ingredients selected according to taste. Rolled coated wafers are obtained with two wafers on which the following mixture is spread: melted butter, honey, a mixture of sugar, chopped nuts or almonds if necessary, cinnamon, vanilla and currants or cocoa (according to taste). Half-coated rolled wafers are then immersed from one or both ends in chocolate icing. Wafers can be fully coated with chocolate.

Appearance and Flavour

The Horické Trubicky PGI is a cylinder 5 cm to 19 cm long, with an internal diameter of 10-20 mm. Each wafer is obtained from 0,9 to 1,2 mm thick wafers. They are light beige and have a smooth and slightly porous surface, with a pleasant aroma, flavour and a crispy consistency.

Production Area

The production area of the Horické Trubicky PGI includes the city of Horice and the adjacent municipalities located in the Hradec Králové region in the north of the Czech Republic.

History

The Horické Trubicky PGI is the result of an ancient and deep-rooted confectionery tradition. The legend says that the recipe was taught by a wounded general and a cook of the Emperor Napoleon to a lady of the place, Mrs Lícková. The first historical mentions of the manufacturing of rolled wafers within the designated geographical area of Horice date back to 1812, when in the family of Mrs Lícková, little sugary rolls began to be produced for family celebrations and as gifts. It was confectioner Karel Kofránek who perfected the production method after marrying into the family. In 1898, a patent was filed for his invention - an electric wafer-maker.

Gastronomy

The Horické Trubicky PGI must be kept in a fresh and dry place. This product is a delicious sweet to be consumed as a dessert or a snack.

Marketing

The product is sold as Horické Trubicky PGI in the following varieties: filled, half-coated filled, coated filled, sprinkled, half-coated sprinkled and coated sprinkled rollers. It is marketed in packages of different weight.

Distinctive Features

Aside from the traditional recipe, the distinctive character of Horické Trubicky PGI depends also on the specific properties of the flour (low in gluten) and the local water (low mineral content, soft) that are used. These components help give the wafers their specific character: extremely soft, porous, crunchy and flaky, these characteristics do not prevent them from being rolled into shape.
