Production Area
The production area of Colli Cimini PGI is within the territory of the municipalities of Bassano in Teverina, Canepina, Capranica, Caprarola, Carbognano, Corchiano, Fabrica di Roma, Gallese, Ronciglione, Seriano nel Cimino, Sutri, Vallerano, Vasanello, Vignanello in the Province of Viterbo, in the Lazio region.
Blends
White, red and rosé wines with the Colli Cimini PGI must be obtained from grapes originating from vineyards, in a business environment, with one or more red/white grape varieties suitable for cultivation in the concerned area.
Description of product typologies
Colli Cimini PGI Bianco, alone or with specification of grape variety, is yellow in colour, sometimes tending towards golden or greenish yellow; it offers varying degrees of fruity fragrances on the nose, based on which grape varieties are used; on the palate it is dry to sweet, typical and sapid, sometimes lively. It can also be a Semi-Sparkling wine. Colli Cimini PGI Rosso, alone or with specification of grape variety, is ruby-red in colour, varying in intensity and tending towards garnet with aging; it is delicate on the nose, with characteristic fragrances of red fruit, hues of spices and aromatic herbs and aromatic elegance deriving from the grape varieties used; it is dry on the palate, with dry to sweet tones, is harmonious, typical, sometimes lively and with good body. It can also be a Semi-Sparkling wine. Colli Cimini PGI Rosé, alone or with specification of grape variety, is cherry-pink in colour, varying in intensity; it displays delicate fruity fragrances; it is dry, harmonious, fresh and sometimes lively on the palate, with the characteristics of the grape variety of origin. It can also be a Semi-Sparkling wine. Colli Cimini PGI Passito is yellow in colour, tending towards amber with aging; it displays intense fruity fragrances on the nose; on the palate it is sweet and sapid, with the characteristics of the grape variety of origin. Colli Cimini PGI Vendemmia Tardiva, alone or with specification of grape variety, is golden yellow in colour; it displays intense fruity fragrances on the nose; it is dry to sweet and sapid on the palate, with the characteristics of the grape variety of origin. Colli Cimini PGI Novello Bianco, alone or with specification of grape variety, is yellow in colour, sometimes tending towards golden or greenish yellow; it displays intense fruity fragrances on the nose; on the palate it is dry to sweet, sapid and sometimes lively. Colli Cimini PGI Novello Rosso, alone or with specification of grape variety, is ruby-red in colour; it displays elegant fragrances and fruity notes on the nose; it is dry to sweet, harmonious, typical and sometimes lively on the palate.
Grape variety specifications
The Colli Cimini PGI, with the specification of one of the grape varieties suitable for cultivation in the Lazio region, is reserved for wines that are obtained from grapes originating from vineyard compounds, in a business environment, for at least 85% of the corresponding grape variety. Grapes similar in colour and originating from other grape varieties suitable for cultivation in the concerned area, max. 15%, can contribute, pure or combined, to the production of the above-mentioned wines. The Colli Cimini PGI with indication of two or three grape varieties, is reserved for wines obtained from corresponding grapes originating from vineyard compounds, in a business environment, on the condition that the wine derives exclusively from the indicated grapes, and that the quantity of grapes produced by each of the two is higher than 15% of the total. The grape varieties must be indicated on the label in descending order, in respect to the actual contribution of the grape.Colli Cimini PGI wines with specification of grape variety must display the organoleptic properties of the grape variety, as well as the indicated characteristics for the typology of wine.
